Tasting notes
Aroma: Rich fruit with vanilla, butterscotch and warm baking spices. Taste: Sweet cooked agave throughout, in harmony with cinnamon, vanilla and citrus. Body and color: A slight, translucent amber from its time in the barrel, with a smooth, rich texture. Finish: A full, viscous mouthfeel and a rich, luxurious finish.
How it's made
Agave: 100% blue Weber agave (agave azul), fully matured at 6 to 7 years, from the Martinez family estate in Ixtlahuacán del Río, Jalisco. Cooking: Slow-cooked in large ovens to turn the starches into fermentable sugars, then rested for up to 48 hours. Extraction: The cooked agave is carefully shredded and its juice extracted. Fermentation: Wild yeast, in the open air, for 12 days, with deep-well water from the family land and some rain water. Distillation: Double-distilled in traditional pot stills. Resting: 6 months in ex-bourbon and ex-Bordeaux barrels.
